On June 13 we were pleased to host a delegation of restaurateurs and chefs from Japan at our Estate, “Le Coccole”, who came to visit our vineyards and our cellars.
The beautiful sunshine and fresh air allowed us to walk through the vineyards and to taste il Botolo wines in the garden.
The delegation included a young Japanese chef, Ito Yasuhiro, known for his fusion cuisine, that combines Mediterranean and traditional Japanese flavors.
The Japanese guests explained to us that the Japanese palate prefers less-structured red wines and fresh white wines, suitable for pairing with spicy food and desserts. The tasting favorites of the day were Barbera d’Asti Superiore DOCG 2016, Piemonte DOC Chardonnay 2017 and Moscato d’Asti DOCG 2018.
Ito Yasuhiro, chef at Trattoria Filo Tokyo, announced his intention to add our Moscato d’Asti DOCG and Barbera d’Asti Superiore DOCG to the restaurant’s wine list.
He also confirmed he would create new dishes that can work especially well with these wines.
