The Manolo and Karol Teruzzi brothers with Mauro Livraghi, their business partner and collaborator, have created a cuisine focused on the careful selection of products and genuine traditional Italian flavors, with only the best ingredients and quality wines being selected. Il Botolo shares the same vision of excellence, and are right at home at the Teruzzi brothers’ restaurant.

Botolo: You have opened a new restaurant in the center of Milan. How does it feel to be in the heart of the city?
Karol: Today Milan is the center of the world. Expo brought great energy to the city and Milan has become international, with a new skyline that looks to the future.
B: Who are your patrons??
K: Many of our customers have been following us for 12 years, when we first started our restaurant business. Today, thanks to such a prestigious location, we serve a very interesting, yet demanding clientele.
B: About cuisine, how important is merging innovation with tradition?
K: We grew up with our mother’s cooking so for us tradition is key. Today we innovate using technology, but we must never forget our roots. This is why my brother Manolo’s kitchen is a combination of innovation and tradition.
B: What does wine mean for you?
K: Wine is an important part of any restaurant; we are meticulous in our selection and we only serve wines we believe in. We tend to gravitate towards small to medium sized boutique wineries that not only make excellent wines, but that have a story to tell that we in turn propose to our customers.
B: What are some of the dishes you recommend as pairings with il Botolo wines?
K: il Botolo white wines are pleasantly fresh with a long-lasting finish. They have just the right acidity that makes them perfect for fish dishes, especially seafood such as shrimp and prawns, which we serve raw. For instance, il Botolo Piemonte Chardonnay is a perfect pairing for our scallop appetizer.
il Botolo wines are easy to drink, and they are so inviting, you want to drink another glass. Take for instance Piemonte Chardonnay Barrique. This wine is rich and complex yet pleasant to drink thanks to its freshness. il Botolo Moscato d’Asti is also a favorite amongst our patrons and is stirring up interest. Overall, the feed-back from our customers has been positive.
Many ask to be served the wine “with the little dog on the label”, a very good sign of brand recognition.
