The recipe we wish to propose is our version of red wine risotto, with our Nizza DOCG as key ingredient.
This is a must try risotto, which has an enveloping and balanced taste, yet full of body. So what are you waiting for? Turn on the stove and get cracking with this marvelous risotto!
INGREDIENTS
for 4 people
- 500 ml chicken broth
- 1 twig thyme
- 100 g butter
- 1 chopped onion
- 1 garlic clove finely chopped
- 225 g rice
- 500 ml red wine NIZZA DOCG
- 25 g parmesan cheese
Preparation:
Bring the chicken broth to a boil and maintain at a constant temperature. Separate the thyme leaves from the stem.
Melt the butter in a thick bottomed casserole pot, add the onion and garlic and fry. Add the thyme and rice and simmer on a low flame. Add salt and stir.
Pour in half of the wine and continue cooking on a high flame. Continue stirring until the wine is fully absorbed. Add half of the chicken broth and continue cooking on a high flame, stirring constantly. When the broth is fully absorbed, pour in the remaining half of the red wine.
Add the remaining chicken broth and continue cooking until the rice is “al dente”. Add water if necessary.
